PALATE - This isn’t Sauvignon Blanc in a crisp shirt - it’s barefoot in the vineyard. Clear lemon colour in the glass, which bursts with orange peel zest and grapefruit brightness on the tongue, sharpened by a waxy green peppercorn bite. Skin contact brings a gentle, savoury chew, while the wild ferment matched with terracotta and French oak adds perfect rustic depth. A vibrant acid backbone carries the wine with purpose, stretching into a long, layered finish that hints at graceful ageing. Playful, evocative, textured, honest, and full of Mornington character. Yum.
